Vineyard owner builds cave for vintage wines

WURTSBORO -- "It's a work in the process right now," Baska Kill Vineyards owner Paul Deninno.

Paul Deninno from Baska Kill Vineyards is really serious about producing really robust red wines. He is carving out a cave for his line of vintage vino.

"I always wanted to build a cave. II actually had blueprints from a few years ago so it's something I was looking forward to doing," said Deninno.

The cave will keep Deninno's wine at a consistently cool climate, 55 degrees no matter the season.

"You really want to keep a steady temperature, with no light, no vibration. That's the best way to age the wines," said Deninno.

An acre and a half of land was cleared the concrete structure.

"We'll actually be able to fit about 30 barrels in here. Actually you could probably even fit more depending on how high you stack them," said Deninno.

Wine caves really aren't seen in our region, but they're popular in other areas such as California. It is an expensive venture to get that perfect temperature for wine. The cave is costing $60,000.

Deninno said, "It probably going to is probably going to take a very long time to get my money back from it."

Construction is coming to a close in a couple weeks. Deninno said it will eventually take his product to another level. And that's coming from a person who recently won the best cabernet franc in show at the Hudson Valley Wine Competition.

"I really love making wine, especially making really nice wine," said Deninno. "It's something not to be rushed, but it's worth the wait."
